Fresh Baked Bread for the Soul

Saturday I got up and immediately felt depressed.

The day was so grey and gloomy I didn’t want to get out of bed, but it wasn’t the day that made me feel so down. It’s been over a year since my layoff and things are a little tight these days. We hadn’t done the regular grocery shopping and wouldn’t be able to do so until Monday. What would we eat for the next two days? That’s all I could think about.

When I was single and had far less responsibility none of this would be an issue. I could have gotten by on spaghetti with salt, olive oil, garlic and a little cracked pepper or simply have some peanut butter and jelly sandwiches.

Kids. Change. Everything.

The one change I’m absolutely grateful for…? I’m a lot more courageous and far more resourceful.

I went to work. I put my clothes on and went out to buy some eggs and yeast. I was going to bake bread. I’ve never attempted it, but there was no better time than today. I found a simple recipe online and the rest was baking history. I didn’t just make bread though; I looked all through the cupboards to see what ingredients I had. When all was said and done I made some falafel with a Greek yogurt cucumber sauce, a split pea and lentil soup and a sweet potato pie!

By the time I was finished with all this I was beat. My feet were killing me from standing all that time, but I was so happy. It felt really good to be able to create something from scratch. I’m glad I paid attention in the kitchen when I was young. Thanks mom!
